Good Morning Sunshine: Jaffa Overnight Oats

Well, with lockdown 4.0 hitting Victoria this week I thought there’s no better time to share a recipe I’ve had on the back of my mind for months now.

Sometimes we find that just as life is seeming to flow in one direction, an obstacle is thrown at us that we’re unable to control. We may feel lost, overwhelmed, disappointed and emotional. It’s times like this that we need to focus on what we can control. We can control how we react to the obstacle and, above all else, we can control our wellbeing.

This week has thrown an abundance of obstacles at me, and I’m sure I’m not alone. But if lockdown can have one benefit, it’s that we all get to slow down and take care of ourselves. Make yourself a priority; what can you do today that will benefit your wellbeing?

Self-care activities enhance our energy, restore health and reduce stress. All of which can reduce your risk of chronic illness. Being both mentally and physically healthy is important to every single one of us. It’s about enjoying life, living with energy and fulfilling your potential. It also means having the ability to cope with stresses, knowing when to relax, and having a greater capacity to connect emotionally with friends, family and community. Self-care can help promote this holistic way of living.

Cooking, exercise and reading are a few of the ways I like to invest in my wellbeing. They offer me the opportunity to relax, get creative and zone out. So, I’ve jumped in today to try a new recipe that has been floating around in my mind for a few months. I hope you enjoy it!

Coming in to winter, it’s a great opportunity to boost your immune system by focusing on your nutrition. Overnight oats are one of those recipes that take a few minutes of your time and make mornings flow more smoothly by offering a quick and healthy start to your day.

These Jaffa Overnight Oats are full of goodies. Fresh orange offers an immune boosting Vitamin C dose, oats supply protein and antioxidants, chai seeds are full of fibre and Omega-3, cocao powder is packed with flavenoids, yoghurt provides probiotics and good quality honey can help fight infection. But more importantly, who doesn’t like chocolate for breakfast?



Jaffa Overnight Oats

Ingredients

  1. 1/2 cup rolled oats

  2. 2 tsp chia seeds

  3. 1/4 tsp fresh orange rind (1/2 tsp if you like it really zesty!)

  4. Juice of 1 large orange (about 1/4 cup)

  5. 1/4 cup oat milk (or your choice of milk)

  6. 1tsp cocao powder

  7. 1tsp local honey

  8. 1tsp almond butter

  9. 1Tbs natural yoghurt

Method

  1. Place all ingredients in a jar, container or glass and stir to combine

  2. Cover and place in the fridge overnight

  3. Dig in
